I see that you call them Okinawan purple sweet potatoes. Is that where they come from? I know that Okinawa has a distinct group of people and language.

The Japanese sugar plantation workers brought them to Hawaii in the late 1800s. The tubers came to Japan from South America much earlier, in the 1600s.

It's interesting how many foods have unexpected origins. After they have been grown in a place for some years, the next generation thinks they are just part of "normal".

I was thrilled when I felt the shredded purple sweet potatoes. The pancakes come together so quickly. They’re also terrific cooked and mashed as a base for gnocchi.
