My Mom loved what she called "sponge cake" which is what we know as angel food cake. I do have to admit to total horror as a young wife when I found out that my in-law used angel food cake for strawberry shortcake. Even though it was a favorite of hers, my farm born and bred Mother would never have done that!

Of course, you could buy angel food cake in the stores, but not REAL shortcake. And, for folks who don't bake ...

I wonder if olive oil would work in this recipe?

Both my mom and grandmom used to make chiffon cakes and angel food cakes. They were adamant that the oven must NOT be opened during the bake lest the cake should fall and I had to tiptoe around in the kitchen, too!

I was like your mom and grandmom when I baked an angel or chiffon cake. Barely breathed near the oven. I eventually woke up.

What an intriguing story. I was trying to imagine how he baked in his spare bedroom. I guess he had to convert it into a kitchen. He was very determined!
